Avocado, Prosciutto, and Quail Egg Bruschetta
Take one bite of an Avocado, Prosciutto, and Quail Egg Bruschetta, and you will be hooked. They are quick to make while full of flavor and nutrition. Yet what makes these stand out is the presentation. They are as beautiful to admire, as they are delicious.
These were made in under 13 minutes. I tell you; they were the best two bites of food. They are tiny (two bites max) yet deliver big-time flavor. Experience creaminess from the avocado, saltiness from the prosciutto, crispness from the bruschetta, and richness from the quail egg all in one bite. Wow, this is officially on our rotation.


Avocado, Prosciutto, and Quail Egg Bruschetta

- 6 slices Italian Baguette sliced on a deep bias
- olive oil for drizzling on bread
- 1 avocado peeled, pitted and sliced into 12 slices
- 6 slices prosciutto
- 6 quail eggs
- 1 tsp ghee for frying eggs
- dill for garnish
Instructions
- Drizzle olive oil on each of the bread slices and spread with a pastry brush. Flip bread over and repeat. Toast or convection bake on a pan until crisp and brown on the edges. If using the oven, flip over to brown both sides.6 slices Italian Baguette, olive oil
- Place two avocado slices onto each toast. Wrap prosciutto around the toast and avocado, starting at the underside. Leave a bit of toast and avocado exposed to give color and texture to the dish.1 avocado, 6 slices prosciutto
- Crack the six quail eggs open and pour each egg into a small dish. Heat a small non-stick skillet on medium-high heat. Add the ghee.6 quail eggs, 1 tsp ghee
- Pour each egg into the skillet and move the yolk to the center with your finger or a wooden spoon. Cook on medium to medium-high for 2 minutes or until eggs are set.
- Garnish with dill and serve immediately.dill
