Corned Beef Party Puffs

These corned beef party puffs are an elegant take on the classic Reuben sandwich!  Inside a choux pastry puff, you will find a mixture of corned beef, sauerkraut, and cream cheese.  This recipe makes four dozen!  At first, I thought that was a lot of party puffs  Instead I learned that guests devour these one-bite wonders.

Corned Beef Party Puffs

Make these corned beef party puffs and watch them disappear! The choux pastry is filled with a mixture of cream cheese and corned beef, while the pastry is laced with caraway seeds. The result is an elevated take on the Reuben sandwich.

Ingredients
  

Choux Pastry

  • 1 cup water
  • ½ cup butter
  • ½ cup all-purpose flour
  • ½ cup rye flour
  • 2 tsp parsley dried
  • ½ tsp garlic powder
  • ¼ tsp sea salt fine
  • 1 tsp caraway seeds

Filling

  • 6 ounces thinly sliced corned beef high quality - chopped
  • 2 pkgs cream cheese 8 ounces
  • ½ cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp chives minced fresh
  • 4 tbsp sauerkraut dried & chopped
  • 1 tbsp horseradish
  • ½ tsp garlic powder
  • 2 dashes hot sauce optional
  • 12 each green olives small stuffed

Instructions
 

Choux Pastry

  • Bring water and butter to a boil in a medium sauce pan.
    1 cup water, ½ cup butter
  • Add flour, parsley, garlic powder, and salt. Stir until a smooth ball forms.
    ½ cup all-purpose flour, ½ cup rye flour, 2 tsp parsley, ½ tsp garlic powder, ¼ tsp sea salt
  • Remove from the heat and let it rest for 5 minutes.
  • Preheat oven to 400 °F
  • With a hand beater, beat in eggs, one at a time until smooth.
  • Drop choux batter by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
  • Sprinkle with caraway.
    1 tsp caraway seeds
  • Bake for 20 minutes or until golden in color.
  • Remove to wire cooling racks and immediately cut a slit into the side of each puff to allow steam to escape. Let cool.

Filling

  • Combine all of the filling ingredients except the green olives if using, and mix well. If using olives, stir into the mixed filling to incorporate.
    6 ounces thinly sliced corned beef, 2 pkgs cream cheese, ½ cup mayonnaise, 1/4 cup sour cream, 2 tbsp chives, 4 tbsp sauerkraut, 1 tbsp horseradish, ½ tsp garlic powder, 2 dashes hot sauce, 12 each green olives

Assembly

  • Slice choux puffs in half horizontally.
  • Add filling to a thickness that is visible once the top is on, approximately ⅓ of an inch.
  • Place onto a decorative platter and serve.

Kitchen Equipment

Notes

Make-ahead:  Puffs can be refrigerated for up to 4 hours.  Refrigeration will cause them to soften, although they are still delicious.
Two for One:  I use a half-recipe of the filling if I'm making this for a smaller group.  I make the choux pastry as written and fill the cooked puffs with flavored whipping cream.
