Deviled Quail Eggs on Caramelized Onion Crisps

This deviled egg recipe is fun, delicious, and nutritious!  These creamy deviled quail eggs get a kick from mustard and horseradish and are topped with a salty caper. They sit atop a crispy caramelized onion crisp for a flavor-packed bite with amazing textures.

These eggs are also unique because they use ingredients from two local businesses.  Just Wingin’ It Gamebirds and Potters Crackers.  Although they’re local, you can order both online!  The fresh organic nature of these products makes the flavor of these little appetizers shine. 

Deviled eggs are that perfect appetizer that fits just about any occasion where people gather.  What makes these little eggs so popular?

Unquestionably this is different from your average deviled egg recipe.  How many people do you know that have tried deviled quail eggs?  They taste richer than chicken eggs because the proportion of yolk to white is more significant.

Deviled Quail Eggs on Caramelized Onion Crisps

Ingredients
  

  • 18 quail eggs Coturnix
  • 1 tbsp mayonnaise
  • 1 tsp dry mustard
  • 1 tbsp prepared horseradish drained
  • pinch cayenne

Garnish

  • 18 capers
  • 1 radish Cut into 18 small julienne pieces
  • 18 Caramelized Onion Crisps Potters
  • paprika for sprinkling

Instructions
 

Hard Boiling Eggs

  • In a heavy saucepan filled with at least three inches of water to a boil. When the water starts to boil, set your timer to 4 minutes. With a skimmer, carefully transfer your eggs into the boiling water and start your timer. Simmer the eggs in a soft boil for the exact 4 minutes.

  • Remove immediately and place the eggs in a bowl of ice water for five minutes.

Deviled Eggs

  • Crack and peel the eggs
  • Cut the top quarter off the small end of the egg. Set the egg on your work surface large end down. If it doesn't stand properly, slice a small piece off the bottom with a paring knife, so it does stand upright.
  • With a paring knife, carefully remove each yolk and place them in a small bowl. Add the additional deviled egg ingredients. Mix with a fork until creamy with no lumps remaining.
    1 tbsp mayonnaise, 1 tsp dry mustard, 1 tbsp prepared horseradish, pinch cayenne
  • Place the tip into the piping bag. Add the deviled egg mixture into the bag and pipe the mixture back into the egg opening making a pretty design as you move to the top of the egg.

Garnish and Serving.

  • Push a radish onto the yolk mixture on an angle. Top with a caper. Place the egg on a caramelized onion crisp. Repeat until all eggs are garnished. Tap paprika lightly onto the top of each egg. Serve.

Notes

Make ahead:  The eggs can be made up to 6 hours ahead and kept in an air-tight container.  Garnish when ready to serve.
