Fizzy Fruit

Fizzy Fruit is a great way to kick off any gathering or party. The carbonation reminds us of celebrations (think champagne), and the surprise of it being in fruit is fun for everyone.  This is a sensory experience.  You can see and hear the bubbles dancing on the fruit!

Here I feature red grapes, yet you can use any high water content fruit or vegetable.  Imagine fizzy pomegranates for the holidays, pears in a fall dessert, strawberries in a mid-summer fruit salad.   How fun to serve fizzy pickles as a garnish! : )   

All you need is a whipping siphon with a seltzer charger and you’re off to creating fun and exciting dishes and experiences for your humans!

Your serving options are limited only by your imagination!  Here I added the fruit to wine.  Many times, I serve them as a kick-off to a tasting party.  Let the gas out of the whipping siphon in front of your guests and watch the curiosity and excitement begin.  Pour them in a bowl and grab a pair of serving tongs and guests will be lining up for seconds.

Add fizzy cherries to your ice cream sundae’s or fizzling lime slices on top of your Key Lime Pie!

Ingredients
  

  • 16 grapes or any juicy fruit or vegetables

Instructions
 

  • Fill the whipping siphon with the 16 grapes, not exceeding the fill line.
  • Screw on the soda charger and carefully turn the bottle to distribute the gas and fruit inside.
  • Release the gas by pressing the lever. Unscrew the lid and serve.

Make Ahead:  Leave in the refrigerator overnight for an especially fizzy effect.
Use your creativity:  Serve as a fruit salad, garnish, topping for desserts and ice cream, or in a cocktail.  
Use fruits with high water content, such as pears, grapes, pomegranate seeds, and watermelon balls.

De Froid Tip: Color

color wheel fans evolving from yellows to greens, to blues and purples ending with pinks and reds.The first thing I do when I’m planning a party or event is to gain a clear understanding of the emotion I (or my clients) want their guests to experience.   Marketing professionals as well as interior designers have been using the psychology of color for decades.   The same principles apply to tablescapes and parties.

Yellow and orange are known for fun and happiness, while “banker blue” lends a more professional feel to the event.  The names given to color can give you a clue – such as “spa blue”, where aqua with a green tint emits a serene feel.

Put your creativity to use with purposefully choosing colors. Then, to put things over the top, play with color in ways that are unexpected.  These are what great experiences are made of.

Our mouth reacts to flavors in a transitional way.  That first taste creates an exciting experience with the food’s intense flavors, textures, and visual appeal.  Yet after the first few bites, our mouths and minds adjust, and that experience deadens.  

Thus, the tasting experience!  We served 14 consecutive courses at my last tasting party.  Each was purposely selected to bring new flavors, textures, and presentations, creating surprises and wow moments throughout the night.

The recipes are documented with ingredients we love.  Yet my greatest hope is to have you understand why the recipes work and eventually make them into your personal version using your favorite ingredients and presentations.
