Fresh Ham and Potato Hash Breakfast

This easy-to-make fresh ham and potato hash breakfast is made with maple-cured nitrate-free ham for a healthy, hearty start to your day. The authentic ham gives this a deep umami flavor while the veggies add freshness to the dish.

This is quick to make with leftover Maple Brined Fresh Ham Steak!  The steak is home-cured, resulting in a nitrate-free ham steak. Fresh ham has an umami-rich pork flavor profile, while the salty-sweet brine gives this steak another layer of flavor.  This gives your breakfast hash an authentic umami flavor, making this a memorable dish.

Fresh ham steak is both delicious and versatile.  Because of this, you will find it can be incorporated into various dishes.  We love to make them into fresh ham steak sandwiches and sliders for gamedays and parties.  Size up and make a large roast to feed a crowd.  It doesn’t take any additional work outside of slicing!

Ingredients
  

Potatoes

  • 3 medium potatoes peeled and chopped into small dice
  • 1 tbsp olive oil extra virgin
  • 1/4 teaspoon salt or to taste

Hash

  • 1 tbsp ghee can use butter or olive oil
  • 1/2 red bell pepper finely chopped
  • 1 medium onion finely chopped
  • 2 cups fresh ham cooked and finely diced
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon dried crumbled thyme

Breakfast

  • 4 large eggs
  • 1 tbsp olive oil extra virgin
  • 4 slices Bread sourdough
  • 2 tbsp parsley fresh chopped

Instructions
 

Pre-cook Potatoes

  • Preheat the oven to 400 °F
  • Meanwhile, dice the potatoes and place them in a medium-sized bowl. Add the olive oil and mix well, coating the potatoes.
    3 medium potatoes, 1 tbsp olive oil
  • Spray a seasoned baking sheet with oil and arrange the potatoes in a single layer. Bake 20 minutes or until starting to brown and crisp slightly.

Hash

  • Melt the butter in a large carbon steel or cast-iron skillet over medium heat. Add the onion and cook until it's softened about 4 minutes. Add the chopped pepper and cook another 2 minutes.
    1 tbsp ghee, 1/2 red bell pepper, 1 medium onion
  • Remove the potatoes from the oven and salt if desired. Add the pre-cooked potatoes, fresh ham, pepper and thyme to the skillet and mix well. Cook hash until well browned, about 10 minutes, stirring occasionally.
    1/4 teaspoon salt, 2 cups fresh ham, 1/8 teaspoon ground black pepper, 1/4 teaspoon dried crumbled thyme

Breakfast - Serving

  • Toast and butter the bread slices.
    4 slices Bread
  • Heat oil in a medium-sized non-stick skillet. Crack the eggs into the skillet and cook on medium heat until set and done to your liking.
    1 tbsp olive oil, 4 large eggs
  • Arrange the hash onto a large serving plate. Set the bread slices to the side and top with the egg and chopped parsley. Serve immediately.
    2 tbsp parsley

Kitchen Equipment

1 sheet pan
1 heavy skillet seasoned

Notes

Use a seasoned carbon steel or cast iron pan to brown the hash. Non-stick pans don't brown as well.
