Grilled Beef Satay

This grilled beef satay recipe has an Asian flavor profile that will wow your guests!  The steak strips are marinated, grilled, and served on a skewer, making the interaction memorable. Easy to pull together and mouth-watering delicious, these will become a staple in your rotation.

Flank steak is generally one of the least expensive cuts to purchase. Because it’s so thin, people tend to overlook it as a quality steak.  Yet flank steak is extremely flavorful, high in protein, and low in fat. It is also an excellent source of iron, zinc, phosphorus, and B vitamins.

What is the best way to prepare Flank Steak?

Marinating flank steak with an acid such as citrus or vinegar chemically breaks down the tough muscle fibers to produce a tender steak. Marinating also imparts tons of flavor. Because of this process, this steak is used in Mexican Fajitas, Asian Stir Fry, and other flavorful dishes that benefit from a marinade.
 
High heat is best for cooking flank steak: the hotter and quicker it cooks, the less tough it will be.  Because of this, grilling is an ideal method for cooking this cut.  Grill on high heat quickly to build a nice crust while ensuring you don’t overcook the thin meat.

Retronasal olfaction is the scientific reason why food tastes better on a stick. Retronasal olfaction means that taste largely relies on one’s sense of smell. For example, if you are blindfolded and plug your nose, and are asked to identify what kind of food you are eating, you will probably have difficulty identifying the food.

However, once you unplug your nose, you will most likely be able to identify the food. For this reason, if you eat food from a stick, the food gets closer to your nose, enhancing the flavor. Therefore, food tastes better on a stick!

Ingredients
  

Peanut Sauce

  • ½ cup smooth peanut butter
  • ¼ cup hot water
  • 2 tablespoons lime juice from 1 to 2 limes
  • 2 tablespoons sriracha or other hot sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon dark brown sugar
  • 1 tablespoon cilantro leaves minced fresh
  • 1 medium garlic clove minced
  • 2 scallions white and green parts, sliced thin

Satay

  • 1 large flank steak about 2 pounds
  • cup fish sauce
  • cup soy sauce
  • ¼ cup vegetable oil
  • 2 tablespoons sriracha
  • ¼ cup dark brown sugar packed
  • ¼ cup cilantro leaves minced fresh
  • 2 medium garlic cloves minced
  • 4 scallions white and green parts, sliced thin

Garnish

  • 2 scallions sliced thin
  • 1 tablespoon cilantro leaves minced fresh

Instructions
 

Peanut Sauce

  • Whisk peanut butter and hot water together in medium bowl. Stir in remaining ingredients for the peanut sauce; transfer to serving bowl and set aside.
    ½ cup smooth peanut butter, ¼ cup hot water, 2 tablespoons lime juice, 2 tablespoons sriracha, 1 tablespoon fish sauce, 1 tablespoon dark brown sugar, 1 tablespoon cilantro leaves, 1 medium garlic clove, 2 scallions

Satay

  • Freeze flank steak for 30 minutes until firmed up. While the steak is is in the freezer, combine the fish sauce, oil, chili sauce, brown sugar, cilantro, garlic, and scallions in a small bowl. Remove the steak from the freezer and slice the steak across the grain on a bias into 1/4-inch-thick strips.
    1 large flank steak, ⅛ cup fish sauce, ⅛ cup soy sauce, ¼ cup vegetable oil, 2 tablespoons sriracha, ¼ cup dark brown sugar, ¼ cup cilantro leaves, 2 medium garlic cloves, 4 scallions
  • Place the steak in a Ziploc bag, pour in the marinade, seal, and toss to distribute evenly. Open and reseal the bag, removing as much air as possible. Let marinate in the refrigerator for at least two and up to 24 hours.
  • After marinating, weave the meat onto individual skewers and lay them flat in a shallow container.
  • Preheat the grill to high. Clean and oil the grilling grate. Place the skewers on the grill and cook until the meat is cooked through and is lightly charred around the edges, about 7 minutes, flipping them over halfway through grilling.
  • Transfer to a platter or individual serving plates. Sprinkle with the scallions and cilantro, and serve with the peanut sauce.

Peanut Sauce:  If you are short on time, substitute a good quality store-bought peanut sauce such as San-J Thai Peanut Sauce.
