The whipped horseradish recipe is a breeze with the use of a whipping siphon.  The contrast between the kick from the whipped sauce and the ribeye will get your creative self thinking about what else would be an ideal match with the whipped sauce.

Meat markets are a great place to start if you want to take your cooking to the next level.  I have our butcher cut thinly sliced ribeye steaks that are one-half of an inch thick.  These are the perfect thickness for sandwiches, as you can typically bite right through them.

If you have freezer space, get in the habit of knowing what your favorite cuts are and stock them.  Then you can have gourmet sandwiches any day of the week while knowing where your meat came from!

Ingredients

  • 4 ribeye steaks thin cut
  • 1 recipe whipped horseradish sauce
  • red onion slices garnish
  • 4 Brioche burger buns

Marinade

  • ¼ cup olive oil extra virgin
  • 1 clove garlic minced
  • 1 tbsp Worcestershire sauce
  • 2 tsp red wine vinegar

Instructions

  • Combine the marinade ingredients in a heavy plastic bag. Add steaks and seal. Marinate for two to 6 hours.
4 ribeye steaks, ¼ cup olive oil, 1 clove garlic, 1 tbsp Worcestershire sauce, 2 tsp red wine vinegar
  • Preheat the grill to medium-high heat. Remove meat from the marinade and pat dry. The surface must be dry before you grill the meat to obtain a nice sear for flavor.
  • Grill for 5 minutes rotating 90 degrees on the first side to create excellent grill marks. Turn and grill for another 3-5 minutes until the meat is properly cooked.
  • Move to a plate and allow to rest for 5 minutes. Meanwhile, remove the whipped horseradish from the refrigerator and slice the onion.

De Froid Tip: Whipping Siphons

A whipped cream siphon uses nitrous oxide gas to whip the ingredients, which gives them a soft and pillowy texture.  The gas creates tiny bubbles and gives it a light and airy texture.

Many siphons come with a mix of decorative tips you can use to create beautiful presentations!

This pretty combination of strawberries and cream uses homemade whipped cream that takes less than five minutes and tastes fresh and delicious!  In addition, the whipped cream lasts over a week in the refrigerated whipping siphon.

Welcome to Foodie de Froid!

If you love real food, take pleasure in eating, and strive for mouth-watering flavor, you have come to the right place.  Here the star of the show IS the food, presenting it in a way that makes it shine.

Tasting Experiences

We feature many appetizers and individual-sized recipes as a purposeful way to experience and share food.

Our mouth reacts to flavors in a transitional way.  That first taste creates an exciting experience with the food’s intense flavors, textures, and visual appeal.  Yet after the first few bites, our mouths and minds adjust, and that experience deadens.

Thus, the tasting experience!  We served 14 consecutive courses at my last tasting party.  Each was purposely selected to bring new flavors, textures, and presentations, creating surprises and wow moments throughout the night.

The Recipes

The recipes are documented with ingredients we love.  Yet my greatest hope is to have you understand why the recipes work and eventually make them into your personal version using your favorite ingredients and presentations.
