Some days are busy.  Pork chops and tenderloins are an easy option for getting dinner on the table.  Make an average meal into a delicious one with sauces and condiments!  If you don’t have time or the energy to make the sauce from scratch, there is no shame in using a premade sauce.  My pantry is loaded with my favorite sweet, spicy, and savory blends! 

Terrapin Ridge’s Habanero Pineapple sauce is delicious and an ideal substitution if you’re in a time crunch.  It has a thick consistency that is perfect for use as a glaze when grilling or broiling.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 habanero peppers chopped (optional)
  • 1 cup ketchup
  • 1 cups brown sugar
  • ¾ cups pineapple juice
  • ½ cup crushed pineapple
  • ½ cup bourbon
  • ¼ cup molasses
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • ½ tsp chipotle chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt or to taste

Instructions
 

  • Heat a medium-sized saucepan to medium. Add the olive oil and saute the onions and peppers until the onions become translucent and the peppers soften.
  • Add the additional ingredients. Stir to combine and bring to a boil.
  • Reduce the heat and simmer until the mixture thickens and reduces, about 20-25 minutes.
  • Serve immediately.

Notes

Make ahead:  Cool the sauce and spoon it into a glass jar leaving 1/2 inch of head space. Store in the refrigerator for up to 7 days or freeze for up to one month.

Thus, the tasting experience!  We served 14 consecutive courses at my last tasting party.  Each was purposely selected to bring new flavors, textures, and presentations, creating surprises and wow moments throughout the night.

The recipes are documented with ingredients we love.  Yet my greatest hope is to have you understand why the recipes work and eventually make them into your personal version using your favorite ingredients and presentations.
