Steak Burgers with au Poivre Sauce

These steak burgers with au poivre special sauce are a treat. The tender ground steak combined with the shallot-based sauce level this burger up. This sauce is so delicious and an ideal pairing with the flavorful meat patties.  

Steak burgers tend to be large and can weigh up to one-half pound. So choose your buns wisely, as you’ll need one large enough to hold the patty yet soft enough to bite through it easily.  Brioche burger buns are the perfect combination to hold the hearty patty.

What exactly is a steak burger? It might be the best burger you ever try—beefier, more flavorful, better!  As the name suggests, this burger is a cross between a beef burger and a steak. Rather than using a beef patty for the burger, use a steak patty for the meat. 

You will find different chefs and butchers have their prized recipes.  I’ve tasted many different blends and have loved them all!   My favorites had brisket, short rib, and sirloin in the equation.

Ingredients
  

Burger

  • 4 ground steak burgers 80/20
  • 2 tsp salt kosher, or more to taste
  • 4 tsp olive oil extra virgin

au Poivre Sauce

  • ¾ cup mayonnaise
  • 1 shallot medium, chopped
  • 3 tbsp cornichons chopped
  • 1 tbsp green peppercorns Jarred. Drained and crushed, or 1/2 tsp coarsely ground black pepper.
  • tbsp cognac
  • 2 tsp lemon juice fresh

Serving

  • 4 Brioche Buns burger
  • 1 medium red onion thinly sliced
  • ¾ cup crispy fried onions or shallots substitute: Frenches fried onions

Instructions
 

au Poivre Sauce

  • Mix the sauce ingredients in a medium-sized bowl. Season to taste with salt. Refrigerate up to 1 day ahead.

Pan Fry

  • Salt both sides of the meat patty to taste. Heat two teaspoons oil in a large skillet over medium-high heat. Add two of the steak burger patties and cook until well browned on the bottoms, about four minutes. Fli burgers, and cook to desired degree of doneness, about four more minutes for medium.
  • Transfer the patties to a plate and tent with aluminum foil to keep warm and let the juices distribute. Repeat with the remaining two patties.

Serve

  • Place the patties on the bottom of the burger bun and top with sauce, red onion, and crispy fried onions. Serve warm.

Notes

Use two heavy pans, and your burgers will be done simultaneously.  
Grill the burgers on clean grates for a smoky charred taste.  Use an instant-read thermometer to gauge the timing and cook to your desired doneness.  Approximately four minutes on each side.
