Whipped Guacamole

This flavor-packed whipped guacamole recipe uses a whipping siphon.  The siphon creates a light and fluffy texture to the guacamole.  This highlights the fresh garden flavors while presenting that all-important brightness from the lime.

The siphon also creates an exciting presentation as the bright green guacamole is dispersed from the siphon!  Create an experience.  Make whipped guacamole.

Whipping Siphons

A whipped cream siphon uses nitrous oxide gas to whip the ingredients, which gives them a soft and pillowy texture.  The gas creates tiny bubbles and gives it a light and airy texture.

Many siphons come with a mix of decorative tips you can use to create beautiful presentations!

Watch your mini tacos come to life with whipped guacamole made in a whipping siphon. It is light and fluffy yet packed with flavor. Your avocados maintain their beautiful color for days due to science! In addition, you get more volume with this technique, which lowers calories while maintaining flavor.

Ingredients
  

  • 2 avocados ripe
  • 4 tbsp tomatillo salsa recommend Frontera
  • 1 small onion diced
  • 2 jalapenos seeded
  • 1 clove garlic minced

Instructions
 

  • Combine all ingredients in a food processor and blend until very smooth.
    2 avocados, 1 small onion, 2 jalapenos, 1 clove garlic
  • Strain sauce through a fine mesh strainer
  • Pour into the siphon
  • shake vigorously 12 times

Notes

Make Ahead:
Make this recipe in the morning of or the night before your gathering.  Let the flavors meld for 3-4 hours.  The guacamole can be refrigerated in the siphon for up to two days.
Recipe Variation:  During the last 15 - 20 seconds, add 1/4 cup whipping cream and 2 tbsp sour cream to the guacamole in the food processor to create a cream-like texture.
